How to Make Ghanaian Rockies

Ghanaian Rockies are delicious deep-fried dough balls made from a combination of flour, sugar, and spices. They are popular street food in Ghana and are often enjoyed as a sweet treat or snack. Here’s a simple recipe for making Ghanaian Rockies at home:

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup milk (room temperature)
  • 1 large egg (lightly beaten)
  • 1 teaspoon vanilla extract
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, ground nutmeg, and ground cinnamon. Mix well to evenly distribute the dry ingredients.
  2. In a separate bowl, whisk together the milk, lightly beaten egg, and vanilla extract.
  3. Slowly pour the wet ingredients into the dry ingredients while stirring. Mix until you get a smooth and slightly sticky dough. If the dough is too dry, you can add a little more milk, a tablespoon at a time.
  4. Cover the dough with a clean kitchen towel and let it rest for about 10-15 minutes. This will allow the dough to relax and become easier to work with.
  5. While the dough is resting, heat vegetable oil in a deep pan or pot for frying. The oil should be about 2 inches deep and heated to around 350°F (175°C).
  6. Take small portions of the dough and roll them into small balls, about the size of a walnut. You can lightly grease your palms to prevent sticking.
  7. Once the oil is hot, carefully drop the dough balls into the oil, a few at a time. Avoid overcrowding the pan, as it can lower the oil temperature and make the Rockies greasy.
  8. Fry the dough balls until they turn golden brown and puff up. It should take about 2-3 minutes per batch. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
  9. Allow the Rockies to cool slightly before dusting them with powdered sugar. You can toss them in powdered sugar or sprinkle it over them.
