Ghanaian Rockies are delicious deep-fried dough balls made from a combination of flour, sugar, and spices. They are popular street food in Ghana and are often enjoyed as a sweet treat or snack. Here’s a simple recipe for making Ghanaian Rockies at home:
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/2 cup milk (room temperature)
- 1 large egg (lightly beaten)
- 1 teaspoon vanilla extract
- Vegetable oil (for frying)
- Powdered sugar (for dusting)
Instructions
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, ground nutmeg, and ground cinnamon. Mix well to evenly distribute the dry ingredients.
- In a separate bowl, whisk together the milk, lightly beaten egg, and vanilla extract.
- Slowly pour the wet ingredients into the dry ingredients while stirring. Mix until you get a smooth and slightly sticky dough. If the dough is too dry, you can add a little more milk, a tablespoon at a time.
- Cover the dough with a clean kitchen towel and let it rest for about 10-15 minutes. This will allow the dough to relax and become easier to work with.
- While the dough is resting, heat vegetable oil in a deep pan or pot for frying. The oil should be about 2 inches deep and heated to around 350°F (175°C).
- Take small portions of the dough and roll them into small balls, about the size of a walnut. You can lightly grease your palms to prevent sticking.
- Once the oil is hot, carefully drop the dough balls into the oil, a few at a time. Avoid overcrowding the pan, as it can lower the oil temperature and make the Rockies greasy.
- Fry the dough balls until they turn golden brown and puff up. It should take about 2-3 minutes per batch. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
- Allow the Rockies to cool slightly before dusting them with powdered sugar. You can toss them in powdered sugar or sprinkle it over them.
- Serve the Ghanaian Rockies warm and enjoy this delightful sweet treat!
Note: Ghanaian Rockies are best enjoyed on the day they are made. They are delicious on their own, but you can also pair them with a cup of hot cocoa or your favorite beverage.
